I have a preference for everything in life (working on that), so I don’t understand this, but I’ve known enough men who are this way to believe it’s a thing. I don’t know if it’s more common for men than women, but based on my observations it is.

My son used to live next door to our favourite coffee shop. But because he worked nights we were rarely there at the same time. He would come in and ask for a hot or cold coffee drink (depending on the time of the year) “with flavour”. And he really didn’t care what flavour. When one of the baristas found out he was my son she expressed concern she would give him something he didn’t like.

When our son was getting married we warned our future daughter-in-law (a fantastic person, BTW) about his lack of preferences. Even with that warning, it’s been a frustration for her a few times.

It’s not that my son has no preferences. The few preferences he has are rather strong, but for many things, he really doesn’t care. That’s who he is and it’s fine.

If your husband says he doesn’t have a preference, take him at his word. If he ends up with something he doesn’t like it’s his fault and he can answer differently in the future.
